I just made this for dinner and it is delicious. I also made some fresh pesto,

exotic cabbage(will send in the recipe), and steam fried swiss chard with garlic

slices. It was all extremely good.

Curried Garbanzo Zuchinni

 

1 T. mustard seed

1 t. cumin seed

1 t. tumeric

1 t. curry powder

 

Heat in a dry frying pan,stirring often. When the mustard seeds start popping,

add the following.

 

1 zuchinni, diced

1 tomato, diced

1 15 oz. can of garbanzo beans, drained

1/2 t. salt or to taste

 

Stir into the toasted spices above in the heated frying pan, mixing well. Cover

with a lid and simmer, stirring occasionally. In 15 minutes, the zuchinni

should be tender crisp. Serve and enjoy.
