Why do you remove the stems?

I wash it, air dry, remove the stalks and freeze in a freezer bag. I do this

with spinach, kale, chard and collards.

Thank you. I understand. Personally, I like them except for collards. Would

probably like them if the ones in the stores weren't so old.
