Guest guest Posted May 9, 2009 Report Share Posted May 9, 2009 My name is Bonnie and I would like to share a simple recipe with you.So give it a try if you wish! 1or 2 medium sized zucchinis 1cup cooked black beans 1/2 cup chopped fine green,yellow,red,pepper combo (or just what you have available) 1 /12oz can stewed tomatoes 1/2 cup red onion chopped fine (or what you have on hand) 1/2 cup chopped celery 1 tsp fresh ground cumin 1/2 tsb.fresh Italian herbs,chopped 1-2 cloves garlic chopped 1 tsp salt 1tsp pure cane sugar 1cup precooked brown or white rice , Wash zucchinis leaving tender skin on. Scoop out the insides save this matter ,but if there is mature seed take them out. Rinse black beans , mix spices and all ingredients together including what was scooped out of squash. Return these ingredients back in hollowed out squash.It may be piled high as some of these ingredients steam and get smaller. Put on cookie sheet and cover with foil or put in a casserole dish with lid or roaster.Bake until shell and every thing is tender.You may drizzle with seasoned tomato sauce.
