Guest guest Posted December 23, 2008 Report Share Posted December 23, 2008 Dublin Potato and Greens Casserole 1 tablespoon butter 1 cup diced onion 1 clove garlic, minced 3 cups coarsely chopped fresh turnip greens 5 cups cooked, diced potatoes 1 cup cottage cheese 1 cup unsweetened yogurt 1/2 cup diced green onions 1/8 cup snipped chives salt and freshly-ground pepper, to taste 1/2 cup grated Irish cheddar cheese paprika, to taste Preheat oven to 350 degrees. In a heavy-bottomed saucepan, melt butter and add onion. Cook, stirring occasionally, until onions are softened, about 5 minutes. Add garlic and continue to cook another minute or two, until garlic is softened and fragrant. Add greens and cook until barely wilted, about 3 minutes. Remove from heat. In a large bowl, mix together the cooked potatoes, cottage cheese, yogurt, green onions, and chives. Season with salt and freshly-ground pepper to taste. Place half of the potato mixture in the bottom of a large buttered baking dish. Spread the wilted greens mixture evenly over the potatoes, then top with the remaining potatoes. Sprinkle cheese evenly over the potatoes, then sprinkle with paprika. Cover baking dish and bake in preheated oven 40-45 minutes. Serves 6.
