Yours to Enjoy, Judy Pineapple Upside Down Mini Cakes * * * * this sounds wonderful, although i like the cherry feature of the larger cakes so that won't be much trouble to add. i just finished reading a cook book from the library where the subject was smaller cakes, for 1 or 2 people. so now i've saved all the 12 oz tuna cans have about a dozen or so. the point being that you don't have to buy an expensive tiny cake pan but use these instead. i work for a homeless shelter and when birthdays come along sometimes we can't celebrate, so i've been baking these tiny cakes for the person's day. i'm surprised too that some of the residents will cut the cake into at least 4 pieces to share. just never thought a pineapple upside down cake. do you know if they will freeze well or not? anyone have experience with freezing the later cakes? that way, i can freeze a few from time to time and have them when i need them. they do thaw in the time it takes to drive from my house to the shelter - 4 1/2 miles plus all the time it takes me to get out the door. thanks again Judy's daughter . . . qupla' hm -- she who is going back to sleep, it's my day off, why is she up this early anyway? **************A Good Credit Score is 700 or Above.
