I make a lot of vegetable dishes, but I'm always looking for more. It's hard to do because I'm the only vegetarian in my family, which is one reason I needed to find other people who are veggie fans. Here's a recipe I make for myself pretty often, one of my favorite soups. Chili-veggie soup 1 can mixed vegetables (or you can use frozen or fresh if you like)(diced potatoes, carrots, celery, green beans, corn, etc (about 15 oz) 1/4 cup minced onions (more or less) 1 can chili beans (the kind that has no meat, just chili-seasoned tomato sauce mixed with the bean soup) Sometimes, I substitute this with a can of beans (any kind) and put in my own chili powder 1/2 can diced tomatoes 1 tsp salt 1/2 tsp pepper 1/2 tsp oregano (or lemon pepper if you prefer. But not both) 1/2 tsp celery salt 1 pinch garlic powder I put it in the crockpot and cook it about 4 hours. Sometimes, about ten minutes before I take it out, I put macaroni in it. That's yummy, too.
