Hi to Everyone!

    Thanks for having me here in the group and a happy new year to

all! I've recently switched to a vegetarian diet and thought this

sounded like a good place to get tips and suggestions from those who

have been on this path for a long time, as well as from those who may be

still struggling a little like me (LOL)! I am a 53 year old diabetic (on

oral medication) and I feel sure that this change will help me to get

and keep better control of my blood glucose levels. 

    The following recipe is one that my husband and I enjoy - hope

you'll like it as well!

~GREEK STYLE PANINI~

 

2, 10 oz. packages frozen chopped spinach, thawed and squeezed dry

1/2 cup crumbled feta cheese

6 French or kaiser rolls, cut in half

2 jarred roasted red peppers, each one cut into 3 strips

3/4 cup prepared hummus

 

Combine spinach and feta cheese in bowl. Spread 1/3 cup mixture over

bottom half of each roll, and top each with red pepper strip. Spread

hummus on top halves of rolls.

 

Heat skillet over medium-high heat, or preheat countertop grill. Spray

sandwiches with cooking spray. Set 2 sandwiches in pan, and top with

saucepan weighed down with 2 cans. Cook 3 to 4 minutes on each side. Or

press 5 minutes total in countertop grill. Repeat with remaining

sandwiches.

 

Makes 6 servings.

 

Note: We make these in a big iron skillet and weight them down with a

second smaller one with a big can sittting in it - works great!
