Hi all, and thanks for letting me join. I am a fairly new vegetarian and really

enjoy it so far. My latest and most fav recipe is simple and delicious. I make

quinoa and add extra water to the pot. Then I throw in baby spinach, cut up

shallots and pre-cut baby carrots. After draining add a very small amount of

salt and a teaspoon or so of Earth Balance for taste. A ripe avocado in here is

also great.
