We hosted a Veg-Mex night for the young (under 25) crowd from our congregation

and we dipped into the happy magical world of the recipe files.

 

We used the empenada dough recipe, and man did it make a TON of empenandas.

This was the best dough that I have ever had for empenanda, and we have made

several 1/2 batches over the past few days with left-overs. Yumm-O!

 

That dough with chunky applesauce or peaches is oh-so good.

 

We also used the Red Chilli Sauce (HELLO!- this was awesome!) and the Green

Chilli Sauce recipes for enchilladas. I would 1/2 the Green Chilli Sauce one

the next time but the kids loved to use the extras for dipping their empenadas

in so nothing went to waste.

 

There were so many amazing recipes to choose from that we will have to try it

again, so we can try some more.
