Absolutely. I am a 2.5 year post op gastric bypass patient so I shove

protein powder into everything.

 

 

 

Pumpkin Muffins

 

6 eggs

 

¾ cup brown sugar (I use splenda brown sugar because I cant tolerate sugars)

 

1T cinnamon

 

½ t ginger

 

¼ t ground cloves

 

¼ t nutmeg

 

22 oz can pure pumpkin

 

6 scoops vanilla protein powder (my fave is lean dessert)

 

1 can evaporated milk

 

 

 

Preheat oven to 350. Blend eggs and pumpkin together. Add brown sugar and

spices. Blend till mixed through. Add protein powder and evaporated milk.

Mix together until there are no lumps. Pour into well greased muffin tins.

Bake for 10 minutes at 350. Reduce heat to 300 and cook for another 40-50

minutes.

 

 

 

Peanut Butter Granola

 

3 cups rolled oats

 

½ cup slice almonds

 

¼ cup wheat germ

 

¼ cup flax seeds

 

¼ cup honey ( I made a batch of rose honey and used that)

 

About a ¼ of a cup of smooth peanut butter

 

 

 

Mix all together. Spread onto a greased cookie sheet. Pop into a 300 degree

oven. Stir after 15 minutes and then let cook another 15 minutes.

 

 

 

If you want the yogurt recipe too Ill add it. Its SOOOOOO easy and no

gelatin. J

I drink protein coffee while I get ready for work. I have no appetite first

 

thing in the am. For my am snack (I have to eat a bunch of tiny meals a

 

day) I usually have homemade granola (I figured out the PB granola last

 

night) and some home made yogourt. Sometimes Ill make pumpkin muffins which

 

are like little pumpkin pies (no flour ) with protein powder and eggs and

 

stuff in them. YUM!
