This is a recipe my boyfriend and I copied from a local mom-and-pop Italian

restaurant.

 

Prepare penne pasta in water, 1-2Tbsp of olive oil, and some garlic salt to

taste. (We just shake it out till the surface of the water is covered, so maybe

like a tbsp.)

 

At the same time, use a large skillet to sautee strips of one red bell pepper,

one green bell pepper, and half an onion (we use the purple onion) in one tbsp

or so of olive oil. You can do this as long as you want, to get the consistency

you want. I like veggies a little crispy, he likes them soft, so we sautee about

5-7min to get them in-between. :-)

 

Drain the pasta and add to the pepper/onion mixture. You can add a little more

olive oil as you toss them together. Also add one chopped, raw tomato and some

oregano and basil to taste.

 

You can also cook some vegetarian Boca Italian sausage and add it to the pepper

mixture with the pasta at the end. When we've done this, we didn't use the basil

and oregano; we just did last night because we didn't have any Boca sausage and

needed more spice. But it would probably be fine if you added the spice and

sausage together. This works well if you have both vegetarians and meat eaters

in the house, like we do. We usually divide the pasta/pepper mix in half and

then add Boca sausage to mine and regular sausage to his. Also freezes well,

which you might need to do because this makes a lot.
