I made them again over Christmas when I had company and folks loved them. I don't add the Chocolate chips, so just put the 1/2c.-3/4 c. of your dried fruit. It is in the cookie bar folder. You might want to check out other recipes in there. So many that look great! %2ARecipes/Desserts/Cookies\ %20and%20Bars/Bars%20and%20Squares/ Enjoy, Judy Arthelene 's Cookie Bars 1/4 c. olive oil 1/2 c brown sugar 1/2 c. agave or honey or maple syrup 2 egg whites or 1 egg 3 c oatmeal 1/2 c whole wheat flour 1/2 tsp salt 1/2 c sunflower seeds 1/2 c pumpkin seeds, chopped 1/2 c pecans, chopped 1/2 c choc chips (optional, I like it better without these added) Beat oil sugar and egg whites together, . Stir flour, oatmeal and salt together, add to above mixture. Stir in remaining ingredients. It will be a stiff batter. Press out on a sprayed Jelly Roll Pan, with your hands and bake 10 mins or until browned on the bottom @ 400. Cut when still warm into squares, or cut before baking. It contains Almonds, Dates, Figs, Dried Cherries, and Raisins. I think I would love to come up with a bar bookie or a cake or something. Don't miss the tip to go ahead and cut these in the pan as soon as you take them out of the oven, as they are still a little soft then and will get crispier and be more prone to break if you wait until they cool off to cut them.
