Guest guest Posted August 8, 2009 Report Share Posted August 8, 2009 Grilled Yellow Squash and Tomato 6 cloves garlic, crushed 1/2 cup olive oil 1/4 cup malt vinegar 1/4 teaspoon salt 1/8 teaspoon ground black pepper 1 1/2 pounds yellow summer squash, seeded and sliced 1 tomato, chopped 2 green onions, trimmed and sliced Combine garlic, oil, vinegar, salt, pepper and squash in a large bowl. Marinate for 10 to 15 minutes; drain, reserving marinade. Grill squash until browned; baste occasionally with marinade. Place in a large bowl; toss with tomato and green onions. This dish tastes best served at room temperature. Yellow squash is best when it\'s small as it becomes bitter as it grows larger Makes 6 servings.
