Yellow And Green Split Pea Salad With Lemon And Mint.

Amount Measure Ingredient -- Preparation Method

125 grams yellow split peas -- (4 oz)

125 grams green split peas -- (4 oz)

1/2 teaspoon dry mustard

1/2 teaspoon sugar

grated rind and juice of 1 lemon

4 tablespoons olive oil

2 tablespoons chopped mint

sea salt

freshly ground black pepper

 

Cook the split peas in separate pans, in plenty of water, until just tender,

30-40 minutes. Drain well. Meanwhile put the mustard, sugar, lemon juice

and oil into a large bowl and mix together. Add the split peas and mint,

season to taste and mix gently. Cook, then transfer to a serving dish.
