Guest guest Posted May 4, 2009 Report Share Posted May 4, 2009 Canned Salsa Recipe 40 cups tomatoes, peeled, chopped and drained (about a half bushel) 10 cups white onions, chopped 6 cups green peppers 4 cup jalapeno pepper, chopped (I use 40 jalepeno, 5 cayenne, 4 chipotle, and 2 habenero) 24 garlic cloves, minced 4 heaping tbsp. cumin 8 teaspoons pepper 1/2 cup canning salt 1 1/3 cup vinegar 4 (15 ounce) can tomato sauce 4 (12 ounce) can tomato paste Mix all and bring to a slow boil for 10 minutes. Seal in sterile canning jars, process 45 minutes in a hot water bath. Follow proper canning instructions please.
