Guest guest Posted March 11, 2009 Report Share Posted March 11, 2009 I let it go through the first rise, then I shape it to what it's going to be like a loaf or rolls and I freeze it like that before the second rise. I always freeze them separately on a cookie sheet and then transfer to a freezer bag after they're frozen (like strawberries). When I want to make something I take it out of the freezer and let it thaw and rise before I bake it - in the winter it's a very slow process and will take all night and 1/2 of the next day, but the summer months it's usually done in about 4 hours.
