Guest guest Posted February 7, 2009 Report Share Posted February 7, 2009 Squash Fritters 1 lb butternut squash sliced 1/2 in thick 1/2 cup all-purpose flour 1 teaspoon baking powder 1 egg 1 tablespoon olive oil 2/3 cup water Oil, for deep-frying Serve with pesto or guacamole Remove skin and seeds from squash. Pat slices dry. Combine flour and baking powder in a bowl; beat in egg, olive oil, and water, adding extra water if batter is too thick. Dip squash slices in the batter and fry in oil until golden.
