Squash Fritters

 

1 lb butternut squash sliced 1/2 in thick

1/2 cup all-purpose flour

1 teaspoon baking powder

1 egg

1 tablespoon olive oil

2/3 cup water

Oil, for deep-frying 

Serve with pesto or guacamole   

 

Remove skin and seeds from squash. Pat slices dry. Combine flour and baking

powder in a bowl; beat in egg, olive oil, and water, adding extra water if

batter is too thick. Dip squash slices in the batter and fry in oil until

golden.

Serve with pesto or guacamole
