Irish Cabbage Soup

 

 

 

2 medium potatoes - peeled and diced

1 medium onion - chopped

2 carrots - chopped

1 medium cabbage - shredded

3 cups boiling water

1/2 teaspoon thyme (or to taste)

1-3 bay leaves

salt and pepper - to taste

1 cup half & half

 

Add all ingredients, except half & half, to the boiling water in a

large pot. The pot will be very full, but keep turning the dry cabbage

down to the bottom of the pot and the cabbage will wilt as it cooks

(everything will fit in the pot - it just doesn't seem so at first).

 

Bring to a boil and simmer for about 45 minutes, or until vegetables

are tender but not mushy.

 

Add half & half and heat (but do not boil).

 

Serve hot. 6 servings.
