I've been dehydrating all the bits and pieces of vegetables I can and then powdering the dried bits for a seasoning blend. I make the mufins out of whatever vegetables I have on hand-pumpkin, butternut, zucchini, etc. It's nice to know about the others I hadn't thought of before.
