Guest guest Posted August 20, 2009 Report Share Posted August 20, 2009 Hi, Here's my creation from last night. This is an easy recipe and super yummy. My meat eating hubby even liked them! He asked me to make these again for him even:) You might want to double up on this recipe - this one made 8 good sized ones. 1/2 package firm tofu 1/4 cup ground almonds (or any nuts you have available) 2 tablespoons of ground flax seed (you may want to add more to thicken your mixture) 2 large celery ribs diced very fine generous sprinkling of garlic and onion powder black pepper, and I used a packet of Sazon seasoning (you can find it in your local Latino market) 1 teaspoon of BBQ sauce and liquid smoke (add more if you like to taste) Mix all ingredients together well, form meatballs, and bake on a cookie sheet lightly sprayed with non stick oil at 325 for 20 minutes, then flip over and repeat. Keep an eye on them as mine needed a little longer to cook in the center. (I served these in toasted pita bread with avocado, fresh hummus spread, red onions and lettuce and tomatoes.) Bon Appetit!
