Guest guest Posted July 12, 2009 Report Share Posted July 12, 2009 * Exported from MasterCook * Gnocchi, Spinach & " ham " bake Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Easy Main Dishes Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound gnocchi -- 600g butter -- for greasing 9 ounces cherry tomatoes -- 250g 7 ounces vegetarian ham of choice -- 200g (I used Quorn ham style slices) 250 grams tub of marscarpone 5 ounces baby spinach leaves -- 150g freshly ground black pepper 1 1/2 ounces Parmesan cheese -- 40g, grated Cook the gnocchi in a large saucepan of boiling, salted water according to packet instructions. Drain and transfer to a greased baking dish. Halve the cherry tomatoes and cut the " ham " into strips. Add to the baking dish along with the marscarpone and spinach leaves. Toss to combine. Season with black pepper and top with the Parmesan. Place under a preheated grill and cook for 4-5 min until the Parmesan cheese is melted and the top is golden. Serve immediately. I prepared it all in advance then popped it into a hot oven for half an hour - I wanted the tomatoes and spinach to cook down a bit as mum can't eat raw veggies.
