Good Morning Vegetable Chimichangas

Hi! Good Morning! How are you doing? I am excited about being a member of this

group.

Here is a recipe that I hope all of you will enjoy cooking and eating.

 

Vegetable Chimichangas

 

INGREDIENTS

The Vegetable Filling and Flour Tortillas

(ALL OF THE PRODUCE LISTED BELOW SHOULD BE FRESH, NOT FROZEN OR CANNED.)

3 medium sized broccoli flowerets

1 large head of cauliflower

1 large zucchini (green squash)

2 large carrots

3 cloves of elephant garlic

1 large onion

1 large green pepper

1 large orange pepper

1 large yellow pepper

2 packages of flour tortillas-8 in each pkg. (THE BURRITO SIZE)

 

The Seasonings

Approximately 1 quart of vegetable oil 

Garlic Powder

Onion Powder

Powdered Oregano

Dried Basil, Rosemary, Thyme, Oregano OR JUST PURCHASE ITALIAN SEASONING 

Cornstarch

 

DIRECTIONS

       Pour the vegetable oil into a large, deep (about 2-3 inches) frying pan. 

Let it heat under a low fire while you proceed to prepare the vegetables. 

       Finely chop the broccoli, cauliflower, onion and peppers.  Shred the

zucchini, carrots, and elephant garlic.  Mix all of the vegetables.  Add the

seasonings to taste.  Mix all ingredients thoroughly in a large bowl and set it

aside.  Mix approximately 1 cup of cornstarch and enough warm water for a paste

in a small bowl. 

       The following procedure must be done for each tortilla. Scoop about 2-3

tablespoons of vegetable filling onto the middle of the tortilla.  Fold one side

of the tortilla onto the filling and brush the cornstarch paste onto it.  Close

the tortilla and press it.  Brush the cornstarch paste on both of the open

ends.  Close them and press them.  Place each chimichanga in the hot oil and

cook them until they are golden brown.  You can put paper towels on a large

plate.  Place the chimichangas on this plate so that excess oil can be drained. 

        These delicious chimichangas should be enjoyed warm.  You can eat them

plain or with sour cream and/or your favorite salsa.  Believe me, they are

always a hit!
