Guest guest Posted December 6, 2007 Report Share Posted December 6, 2007 The ginger cupcakes are wonderful! I've made them a couple times -- without the frosting (I've never liked frosting). They're a little too sweet for my taste, though, so I also like to make these in minimuffin tins -- it takes 12-13 minutes to bake, and one recipe (12 cupcakes) will make 48 minis. Hy-Vee is very close by, and I can buy the soy milk. Anyway, I think vegan cupcakes are cool. I was jsut trying to figure out if regular milk substituted, but that's not the route I want to take. It'll be cool to tell my son's friends, " Want some vegan cupcakes? " I can't wait. I didn't stop with that one cookbook,but I bought The 30 Minute Vegan. I also found the Brand Name Cookbook, for vegetarians. It's okay...all recipes are great to have on hand. I like the 30 minute vegan cookbook. I think I bought mine through some fundraising thing from mom's school.
