I have just received this book, that was discussed a while back - it

is very good. I have yet to try baking anything, but it looks

straightforward, and full of hints and tips.

The ginger cupcakes are wonderful! I've made them a couple times --

without the frosting (I've never liked frosting). They're a little

too sweet for my taste, though, so I also like to make these in

minimuffin tins -- it takes 12-13 minutes to bake, and one recipe (12

cupcakes) will make 48 minis. Or 6 cupcakes and 24 minis.

Thanks - I reckon I would like ginger ones too - but with topping.

Thanks also for the tips of amounts and cooking time.

  • 1 year later...

That's what I'll do. lol. at this point, every recipe I have, I'll not alter.

Hy-Vee is very close by, and I can buy the soy milk. Anyway, I think vegan

cupcakes are cool. I was jsut trying to figure out if regular milk substituted,

but that's not the route I want to take. It'll be cool to tell my son's friends,

" Want some vegan cupcakes? " I can't wait.

I didn't stop with that one cookbook, but I bought The 30 Minute Vegan.

I am rading this book,I also believe the recipes are altered. heck, the only

ingrediant I don't have on hand is soy milk. that's not a biggie.I'm excited to

make it.

I also found the Brand Name Cookbook, for vegetarians. It's okay...all recipes

are great to have on hand. I like the 30 minute vegan cookbook. It reads well.

been adjusted to make it vegan, so eggs and dairy could severly change the

texture or make the recipe possibly flop.

place of one whole egg, or use 1/2 cup soy milk in place of 1/2 cup whole milk.

Where did you get the Brand Name Cookbook for Vegetarians? I have one of the

regular ones, I love it. I think I bought mine through some fundraising

thing from mom's school.
