It comes in a wide variety of colors from yellow, orange, red, pink, purple, and black. Many foodies and medical processionals are also calling it a "super grain" because it contains all nine essential amino acids in addition to being high in protein, calcium, magnesium, manganese, phosphorus, iron, copper and B vitamins. In fact, 1 cup of quinoa contains more calcium that 1 quart milk—100 percent absorbable and usable by your body—and twice the protein of rice and barley. In ½ cup, dry quinoa, you'll find… 11 grams protein 5 grams fiber 51 milligrams calcium 629 milligrams potassium 179 milligrams magnesium 7.9 milligrams iron 2.8 milligrams zinc 42 micrograms folic acid.
