They use fat-heavy dairy in theirs, but I wanted mine to be a healthy vegetable side dish. I ended up making a spicy dish using wasabi. Here's the recipe: Wasabi Fauxtatoes 1 head cauliflower 2-4 tsps wasabi powder (to taste) 1/4 cup brown rice vinegar salt to taste Cut the cauliflower into small pieces. Steam until very soft. Drain, then mash with a potato masher. In a small bowl, stir the wasabi powder and vinegar together using a small whisk until all lumps are dissolved. Stir into the mashed cauliflower.
