Guest guest
I have a dear young Jamaican black high school student. Because he is Rastafarian, he set about adopting a Vegan lifestyle. He asked me many questions about it, and I had to be very careful as I did not know his parents’ viewpoint on the subject. Since he feels strongly about this, he went at it full bore, and now he has lost a lot of weight. He asks me what to do and I try to help him, but I am very general and vague given my position as his teacher. I told him several times that he needed to talk to his parents about this; I could not advise him well because I am not a young Black man. So, what would you suggest? Are there some higher fat Vegan foods I can steer him toward? Cyn
Guest guest
I'd guess he's not eating *enough* food. Do you know what he's eating now? Is the food budget a concern? Probably the most useful thing for both him and his family is to learn to cook rice and beans -- wholesome, filling, and cheap, as well as adaptable to whatever seasonings are culturally familiar. If food budget is not a concern, add tons of fruits and vegetables and nuts. Are cooking classes available in your town, or does the local library carry any good vegan cookbooks? He's certainly old enough to be cooking his own meals, or even cooking for the whole family if they'll eat it. The rule of thumb is to find a few dishes you like that you can cook on a regular basis. Or you can find out what his favorite dishes used to be, and then look up (or show him how to look up) vegan versions on the web. Guest guest
I would think he should eat more rice, hemp, and seeds and nuts, which are all high in calories. He will need at least 2000 calories a day, so probably worth him keeping count for a week or so. Guest guest
Add nuts and seeds to stirfrys is a good. Also making a pesto with pinenuts would help. As a last, not so healthy, resort there are always vegan cakes, which are extremely delicious. Guest guest
I'd omit the junky foodlike substances ( " empty calories " ). He's a growing boy and needs high-quality nutrition -- a variety of whole foods in abundance.
