1 1/2 tbs olive oil

1 x 394g packet of silken firm tofu, cut into 2.5cm cubes

For the Szechuan relish

250g fresh tomatoes, diced

100g cucumber, diced

1 red chilli, deseeded and sliced

2 tbs thinly sliced spring onions

1/2 garlic clove, crushed

1/2 tsp soft brown sugar

1 tbs lime juice

2 tbs chopped fresh coriander

1/2 tsp freshly ground black pepper

Preheat the oven to 240C/Gas 9. Pour the olive oil into a large foil-

lined roasting tin and spread it with a brush. Arrange the tofu cubes

evenly over the oil. Put the roasting tin on the top shelf of oven,

and roast for about 15-20 minutes or until the tofu is crisp and

golden brown. Meanwhile, make the Szechuan relish. Combine all the

ingredients in a bowl and mix well. Set aside. Finally, put the
