Well I spent $30 on VEGAN BROWNIE recipe 2 weeks ago, and fell in love!! BETTER tasting then regular brownies and they dont give me a stomach ache.. boy oh boy I ould keep on eating and not feel sick!! Since then I havent eaten anything diary, egg, honey, YOU NAME IT. (and it's not called "Death By Chocolate Brownies" for nothing... adapted very slightly from "Sinfully Vegan"). Apologies for the US measures, but it's a US book.... but well worth getting for the rather wonderful vegan cakes etc.! 1 1/3 cups granulated sugar 3/4 cup applesauce 2 tablespoons water 2 teaspoons flax powder 1/2 cup of water 2 teaspoons vanilla 1 1/3 cups white flour 3/4 cup cocoa 1/2 teaspoon baking powder 1 cup choc chips Stir together sugar, applesauce & 2 tablespoons of water. Separately mix together flax powder with 1/2 cup of water, and then add to the applesauce mix. Add the vanilla and mix. Separately, mix flour, cocoa, baking powder. Add the applesauce mix to the flour mix & stir. Add choc chips. Pour mix into baking dish (with some sort of non-stick element if you ever hope to eat them!) - 8x8 inch is recommended in the book. I use a 6x9 inch. Bake for 40 minutes (or longer if you want it more cake like) Topping: 1 cup icing sugar 1/4 cup sunflower oil 1/2 teaspoon vanilla 1/6 cup cocoa 3 1/2 tablespoons arrowroot 1/2 cup water Make while brownies are cooking!!!! Mix all the ingredients except the water together in a small saucepan. Add the water, and stir. Turn on the heat, and eep stirring until mixture thickens.... do not boil (I'd recommend holding the pan a little above the heat - it thickens quicker!!!) In an emergency in the past I managed to find a jar of applesauce - although we normally stew our own apples (Katy often has stewed apples as part of her breakfast!!!) Some of them are better at adding moisture and density, others are better at making the dough rise more. In an emergency in the past I managed to find a jar of applesauce - although we normally stew our own apples (Katy often has stewed apples as part of her breakfast!!! ) And it may seem like a lot of work... but it's well worth the effort!!! Guest guest Posted May 15, 2008 Report Share Posted May 15, 2008 For brownies I do: 2 cups of white sugar 2 cups of all bleached all purpose flour 2 tablspoons of vanilla 1 tablspoons of baking powder 1 full cup of 100% cocoa mix 1 full cup of applesauce (give them a brownie like texture, no it doesnt make it taste like applesauce and YES they do better with applesauce) 1 full cup of unsweetened chocolate chips And you can now add either 1/2 cup of water or plain organic soymilk (I havent tried chocolate soy milk with my brownies yet, BET IT TASTE GREAT!) They bake a lot faster than regular brownies.. plus our oven is new, so it takes only 15 minutes JUST ABOUT at 335f and after 5 minutes I keep checking on them every 2 minutes unrtil the knife comes out CLEAN.
