Well times have been tough $$$ wise. And well I hardly ate dairy and

eggs anyway except in brownies. Well I spent $30 on VEGAN BROWNIE

recipe 2 weeks ago, and fell in love!! BETTER tasting then regular

brownies and they dont give me a stomach ache.. boy oh boy I ould keep

on eating and not feel sick!! Since then I havent eaten anything

diary, egg, honey, YOU NAME IT. Im so happy of myself. Just thought I'd

share :)

Hi Peter

 

Well if you want a Brownies recipe try this one.... (and it's not called "Death By Chocolate Brownies" for nothing... adapted very slightly from "Sinfully Vegan"). Apologies for the US measures, but it's a US book.... but well worth getting for the rather wonderful vegan cakes etc.!

 

1 1/3 cups granulated sugar

3/4 cup applesauce

2 tablespoons water

2 teaspoons flax powder

1/2 cup of water

2 teaspoons vanilla

1 1/3 cups white flour

3/4 cup cocoa

1/2 teaspoon baking powder

1 cup choc chips

 

Stir together sugar, applesauce & 2 tablespoons of water.

 

Separately mix together flax powder with 1/2 cup of water, and then add to the applesauce mix.

 

Add the vanilla and mix.

 

Separately, mix flour, cocoa, baking powder. Add the applesauce mix to the flour mix & stir. Add choc chips.

 

Pour mix into baking dish (with some sort of non-stick element if you ever hope to eat them!) - 8x8 inch is recommended in the book. I use a 6x9 inch.

 

Bake for 40 minutes (or longer if you want it more cake like)

 

Topping:

 

1 cup icing sugar

1/4 cup sunflower oil

1/2 teaspoon vanilla

1/6 cup cocoa

3 1/2 tablespoons arrowroot

1/2 cup water

 

Make while brownies are cooking!!!!

 

Mix all the ingredients except the water together in a small saucepan.

 

Add the water, and stir.

 

Turn on the heat, and eep stirring until mixture thickens.... do not boil (I'd recommend holding the pan a little above the heat - it thickens quicker!!!)

 

When brownies are ready, pour topping over the hot brownies.

measures are not the problem, ingredients are .Applesuace? is that just stewed apples?, where the hell and I going to get flax powder from? can I substitute anything for flax powder & applesauce ( dont realy want to buy cooking apples, and stew them just to make an ingredient.........)?

Yep - stewed apples, squish them through a seive to make it a bit less bitty!

See if you can spot "LinuSprout" at a local wholefood shop / organic type retailer. Normally in a green box.

In an emergency in the past I managed to find a jar of applesauce - although we normally stew our own apples (Katy often has stewed apples as part of her breakfast!!!)

 

And it may seem like a lot of work... but it's well worth the effort!!!

applesauce comes in a jar here...

ground up pulverized apples...very sweet

LOL - have you ever seen The Vicar of Dibley (probably not). One of the old ladies in that was always cooking cakes with very strange ingredients.

when we were in the UK last year, didn't see many shows, just a bunch of morning news programs, and we were left wondering about the strange stop and start times...it's 8:10am, ok, have a good day", and the next show would come on,,,,

improvise anyway,a nd I never make the same recipe twice (always

trying something different). Here's a list of possibilities, to

mashed banana, soaked and blended prunes, applesauce, or other fruity

puree -- one cookbook even suggests crushed pineapple

Vegan Cupcakes Take Over the World cookbook uses this a lot)

 

1/4 cup blended soft tofu

 

baking soda and/or baking powder with an acid such as

make bubbles)

 

1 tablespoon flax meal in 3 tablespoons water (it's easy to find

flax meal in the u.s., Trader Joe's carries it)

 

I've used all of these (in different recipes). Some of them are

better at adding moisture and density, others are better at making the

dough rise more.

 

If I were looking for a great brownies recipe, I'd google ppk

brownies (website of Vegan with a Vengeance and Veganomicon

recipes).

LOL. The first series (I thought) was rather funny, but it went

downhill after that.

 

I guess the strange times on the telly are due to local channels

having small slots in the national news or weather programmes.

We often used mashed banana as an egg substitute in cakes, but for

the brownies, the flax powder (which here is fairly grainy) gives the

brownies a good texture.

Yep - stewed apples, squish them through a seive to make it a bit less bitty!

See if you can spot "LinuSprout" at a local wholefood shop / organic type retailer. Normally in a green box.

In an emergency in the past I managed to find a jar of applesauce - although we normally stew our own apples (Katy often has stewed apples as part of her breakfast!!! )

 

And it may seem like a lot of work... but it's well worth the effort!!!

For brownies I do:

 

2 cups of white sugar

2 cups of all bleached all purpose flour

2 tablspoons of vanilla

1 tablspoons of baking powder

1 full cup of 100% cocoa mix

1 full cup of applesauce (give them a brownie like texture, no it

doesnt make it taste like applesauce and YES they do better with

applesauce)

1 full cup of unsweetened chocolate chips

 

And you can now add either 1/2 cup of water or plain organic soymilk

(I havent tried chocolate soy milk with my brownies yet, BET IT TASTE

GREAT!)

 

They bake a lot faster than regular brownies.. plus our oven is new,

so it takes only 15 minutes JUST ABOUT at 335f and after 5 minutes I

keep checking on them every 2 minutes unrtil the knife comes out CLEAN.
