Guest guest Posted June 5, 2008 Report Share Posted June 5, 2008 I haven't made chocolate cake, but I've experimented with lots of " egg replacers " such as applesauce, prunes, ground flax seeds, pumpkin, etc. My favorite is pumpkin. This weekend I made some pumpkin muffins based on a recipe from Vegan with a Vengeance. I used extra pumpkin instead of oil, and a lot less sweetener, and added too many chocolate chips to one batch. The muffins with chocolate chips are incredibly rich, moist, and dense, especially when they are warm so the chips are melted. I've tried various recipes, but they either turn out too crumbly, or chewy and dry. I've never heard of replacing eggs with pumpkin, but will give it a go the next time I get a squash delivered in my organic vegetable box.
