I have this recipe: 2-1/4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 1 cup Earth Balance*, softened (although Earth Balance is the best, you may use any other non-dairy butter/margarine) 3/4 cup granulated [white] sugar 3/4 cup packed brown sugar 1 teaspoon vanilla extract Egg Replacer for 2 eggs** 2 cups (12-ounce package) semi-sweet chocolate chips 1 cup chopped nuts (optional) found from http://www.chooseveg.com/vegan-chocolate-chip-cookies.asp I have ALL ingredients. But, YES BUTTTTTTTTT - but the egg replacer. I was searching for it all over the place at our local safeay. WHere can I find it?? ALSO if I cannot find the egg replacer, and grounded up Flax seeds. Can I use other oils? Or a bit more of whater?? When I was a Vegetarian, not a Vegan, I'd use more butter (with the all ready ready to make but needs water, oil and eggkind of boxes of brownie and cookie mixes) could I do the same and use a bit more oils??? Guest guest Posted June 6, 2008 Report Share Posted June 6, 2008 " Egg replacer " is used mostly as a leavening agent in baked goods, though it can also be used as a binding agent. IIRC it's potato starch plus baking powder/soda and maybe 1 or 2 other ingredients that are mixed with water. In your recipe, I see no other leavening agent (for lightness, so it'll rise more), so for the amount of flour you're using, I looked at some other vegan cookie recipes, and I'd try something like 2 teaspoons of baking powder and 1/2 teaspoon of baking soda. Or if you're looking for a more chewy/cakey texture, you could use one of the binding agents such as mashed banana or applesauce or any other pureed fruit (1/2 cup to replace 2 eggs), either instead of or in addition to the leavening agents. Guest guest Posted June 10, 2008 Report Share Posted June 10, 2008 Well I didnt have any Egg replacr So I went along with the recipe, and instead of egg replacer I used 3/4 a cup of Safflower oil. They turned out really good.
