Guest guest Posted July 15, 2008 Report Share Posted July 15, 2008 1/2 can of 100% vegetable broth2-3 white or equal amount of red potatoes1/2 of yam or sweet potato1/4 red onion1 cup sliced mushroomshandfull of baby carrots (10)one tomato, quartered1/4 red or green pepperOptional: zuchini, squash, asparagus, or any other veggieMrs. DashPut oven on 375. Get large glass baking dish (13x9).Pour 1/4 inch of vegetable broth in dish.Put handful of carrots in the middle.Slice potatoes in 1/4 inch slices and put yams on one side and other potatoes on the other side of the carrots.Cover with sliced onion and pepper.Put in quarters of tomato juicy side down.Sprinkle well with Mrs. DashPut in oven and time for 25 minutes.While in oven cut up the rest of the veggies (those that will only need 20 minutes in the oven.After twenty five minutes, take out of oven and stir just to get under the liquid. Then add new veggies, more Mrs. Dash, and more vegetable broth if needed. Cook for another 20 minutes or until potatoes are done.This recipe is wonderful, as the vegetable broth and Mrs. Dash sort of carmelize and it is like you have veggies in butter.
