Try this vegan-friendly version of French toast for breakfastBy: Anisa Buttar, Copy Editor

The ingredients in this simple recipe make it healthy and delicious. Whole wheat bread is an excellent source of fiber; bananas are a good source of potassium and vitamin B6. This recipe works best with large coconut shavings (they're about the size of pencil shavings). You can find Earth Balance and the coconut shavings at Whole Foods and Sunflower Market.Ingredients-sliced whole wheat bread-¼ cup vanilla soy milk-3 ripe bananas-1 tsp vanilla extract-¼ cup vegan sugar (plus a few teaspoons)-coconut flakes-Vegan butter (Earth Balance works perfectly)Method1. Mash two bananas with a fork in a medium size bowl. Add the soy milk, vanilla and the ¼ cup of sugar. Mix well. The mixture should have a gooey consistency and may be slightly bumpy. Set a medium size pan on medium heat.2. Soak both sides of a piece of bread in the mixture. Be sure to coat

the edges as well. Put a teaspoon of soy butter in the pan. The butter should melt, but if it turns brown the pan is too hot.3. Sprinkle coconut on one side and place the bread in the pan, coconut side down. While this side is cooking, slice some bananas on the topside. Add a few drops of batter on top of the sliced bananas. This will help keep the banana slices on the bread while it cooks. Add more butter to the pan throughout cooking if necessary.4. After about five minutes, flip the bread with a spatula. Add a few pinches of sugar on top of the bread. This will make the coconut slightly caramelized and crunchy.5.After another five minutes flip the bread over again to cook the sugar/coconut side. Adding more sugar will "caramelize" the banana side.6.Top the toast with batter or maple syrup, or just serve it plain.
