I've found out they need to be almost liquid and fall apart in my fingers to be sweet. So I have 6 or 7 pints of slightly tart berries to play with. I planted a thornless blackberry in my organic garden last year and this is the first year of harvesting. I've " shared " my harvest with the birds, though the birds are not picky about ripeness -- they go ahead and eat the berries when they are nowhere near ripe. A vegan blackberry cheesecake is a good idea. I was also thinking about making a fruit crumble and some blackberry sauce for vegan ice cream.
