Like the common (in America anyway) breakfast scrambles with eggs, there are at least a million ways to make a tofu scramble. Here's a basic recipe to get you started: * 1 block of firm tofu, drained and pressed * 1 Tbsp Braggs or soy sauce * 2 Tbsp Nutritional Yeast (large yellow flakes) * 1/2 tsp turmeric * 8 oz shredded vegan cheese (optional) * 1 tsp garlic powder * 1 tsp onion powder * dash of salt and pepper Mix the above ingredients in a bowl so that the tofu is crumbly. I use my hands to do this. The consistency is nice with this technique. In a pan, heat: 2 Tbsp coconut oil (you can substitute margarine or your favorite oil here, but the coconut oil gives it a nice flavor) Stir in any combination of: * 1/2 onion diced * 1/2 bell pepper diced * small package of white mushrooms * 8 oz vegan sausage sub., crumbled and/or anything else that one would normally eat in an omelette or with eggs. After the onion has gone clear and the other ingredients are cooked to your liking, add the tofu mixture and stir over medium heat until the tofu is well heated (I'd say until the vegan cheese melts, but we all know that may NEVER happen). I finally made my first scramble a month or so ago as a tester for a cookbook and I'm addicted to it!
