I have a number of disabilities and I am going through a particularly hard time right now. Even in the best of times I hate to cook but lately my nutrition has really suffered. I mostly live on cheerios/soymilk. There is not a single vegetarian restaurant in my city. I would really appreciate it if someone would share with me recipes they eat on an everyday basis. I am vegan and I am looking for meals that are healthy (nutritious and low calorie), tasty and very easy to prepare. Thank you for any recipes you have to share. Guest guest Posted October 17, 2008 Report Share Posted October 17, 2008 Do you have a crock pot? Can you buy dried beans? They're very cheap and surprisingly easy to prepare. With a crockpot they don't require watching the way they would on a stove top, But if you don't have a crockpot they can be done that way. Night before Dump one pound of beans (except lentils, black eyed or dried peas) into a colander. rinse and pick out any rocks or debris (unusual to find but it does sometimes happen) put in a pan, cover with water and leave to soak, covered, overnight Morning. Dump soaked beans back into colander, rinse well, put back in pan, or into crockpot. Add a generous amount of water and put on very low flame/setting or turn crockpot to low and cover. If they're cooked on a stove top you'll need to check the water level and stir every half hour or so. If in a crockpot you won't need to do anything until they're done. Add salt (I usually add about 2 teaspoons per pound) about an hour before they're scheduled to be done. They take anywhere from 2 to 4 hours to cook. Done when beans are soft. You'll have 8 to 12 servings of beans for about a dollar (equalivant to 4 or 5 cans) I drain and freeze most of them in single serving size batches in plastic bags. It's easy to toss one of the bags in the fridge the night before you want to use them, or to add them to something you're cooking without needing to thaw them. There a couple million things you can do with beans to change the taste texture etc. If there's a library in you community you might want to see if the have a bean cookbook you can check out. Hope this gives you a bit of a start. I love to cook, and I'm the queen of cheap. Guest guest Posted October 17, 2008 Report Share Posted October 17, 2008 where do you live raven? when you aren't wolfing down the cheerios, what are some of your fave styles of food? sorry, i don't really eat anything on a daily basis, well, besides beer, but we won't go into that. for a quick, cheap and easy meal, its hard to beat pasta. its fast, you can add innumerable sauces and toppings and such, its easy, and i love it. for me, yesterday for dinner was tacos and burritos...soy taco "meat" with refined beans, salsa, rice, etc. this morning...salad...variety of lettuces and greens, snap peas, carrots,sliced avocado, etc with olive oil and balsamic. dunno what i'm doing for lunch yet,..haven't given it much thought. cheers fraggle ravenflight393 Oct 17, 2008 9:36 AM please help with recipes Hi everyone,I am glad to have found this group. I like ethnic foods mostly, Italian, Mexican etc. I also like the kinds of food often found in vegetarian cafes, sandwiches, soups, wraps. There is a vegetarian restaurant about an hour from my house in another city that I visit maybe 3 times a year. They make their own wonderful vegan cheese and make this reuben sandwich that is wonderful. Thank you for your ideas, Fraggle. The salad idea is particularly useful to me. I like all the ingredients you mentioned and I could probably add some beans to it for a substantial easy meal. Also, pasta is of course a great idea. I do make pasta some times. I welcome all ideas. I would be interested in hearing more good ideas Fraggle or others might have. And many elements of it are easy everyday food-- -- bean soup with a couple spices. Black-eyed peas cook fast. I made some with bay leaves once for a nonveg potluck, and got asked for the recipe! Or add tomato sauce and chili or cayenne for vegan chili. -- roasted vegetables. I don't add anything, because baking intensifies the flavor. If you taste them and you need spices, you can add them. I wash the vegetables, cut them up (sometimes), put them on a baking dish, and bake. For something that releases a lot of liquid, such as onions, I use a deeper dish and take them out of the oven when they're still crunchy. -- braised or stir-fried vegetables. Cooking time is less than roasting time, though cutting up the vegetables into smaller pieces takes more time than putting them on a baking dish. It's possible to use water as a cooking liquid, or you can make a basic cooking sauce from tamari, a little oil, some lemon juice or vinegar, a bit of sweetener, and herbs/spices such as garlic and ginger. -- baked fruit! I got a bag of 8 or 9 peaches at the farmers' market for a dollar a few times, so I baked them (since they would've gone bad in a couple days), and they were ambrosial. Once I added blackberries from my garden. I don't add anything to baked fruits -- no sweeteners, no spices.
