Guest guest Posted December 13, 2008 Report Share Posted December 13, 2008 Recipe: Chickpea Socca Recipe: Chickpea Socca Serves 4 2 cups chickpea flour ½ teaspoon sea salt 2 tablespoons herbes de Provence 3 cups warm water ½ cup extra virgin olive oil 1. Preheat the oven to 450 degrees. Combine the chickpea flour, salt and herbs in a medium-size bowl. Add the water and whisk until smooth. Whisk in the oil, cover, and allow to rest 1 hour. 2. Oil a 9-by-13-inch baking dish and heat in the over for 2 minutes. 3. Take the pan out of the oven, whisk the batter, and pour it into the hot pan. 4. Return the pan to the oven and bake for 18 to 25 minutes, until the socca is set and starts to crisp. 5. Remove the pan from the oven and score the socca into 12 3-inch squares. You will need three slices for each serving. Herbes de Provence — 1 teaspoon each of basil, sage and rosemary; 2 tablespoons of culinary-grade lavender flowers (do NOT use potpourri lavender); and 3 tablespoons each of oregano and thyme. — Recipe from " You Won't Believe It's Vegan!
