Casseroles! (was Hello)

Here's one of my faves. I learned it when I used to volunteer to make

meals for a homeless shelter. The church made it because it's easy to

make in quantity and everyone likes it. It's a tomato-mac casserole

which turned out to be very easy to vegicize.

 

8 oz wholegrain macaroni

1 onion, diced

1 clove garlic, minced

1 tsp dried oregano

1 tbsp olive oil

1/2 package veggie crumbles (or TVP, soysage, frozen-then-thawed tofu,

or your protein source of your choice)

1 can diced tomatoes

1 jar marinara pasta sauce

salt and pepper to taste

ad libbed additions (chopped olives, capers, etc.)

bread crumbs

 

Boil the macaroni until it's somewhat cooked but still fairly firm (it

will continue to soften in the casserole.) At the same time, saute the

onion and garlic until the onion is soft and translucent. Add the dried

oregano and stir, cooking for about a minute longer.

 

In a 9 x 11 casserole dish, mix the remaining ingredients except for the

bread crumbs with the onion mixture. Top with bread crumbs. Bake at a

moderate oven temperature (gas mark 4-5, Celcius 175 - 200, Farenheight

350-375) until hot and bubbly and the bread crumbs are toasted brown

(about 30 minutes.)

 

This tastes great with Parma sprinkled over it. I don't know how widely

available that is, but it's a sort of parmesan substitue made of

nutritional yeast and herbs. Quite tasty!
