I usually start with a recipe from Vegan with a Vengeance or some other source, then modify it each time I make it. So starting from a recipe for Pumpkin Muffins, this week the recipe morphed into oat (I love the texture that oatmeal adds)-walnut-raisin-chocolate chip (organic vegan sunspire, which for me means I don't need to add any other sweetener)-rye (the only flour I had on hand)-delicata (squash) muffins. I left out the oil, because I always replace oil with pumpkin (or other veg) and a liquid (usually soymilk, but I was out so I used water). I kept the pumpkin pie spices -- cinnamon, cloves, allspice, ginger, nutmeg, and of course some molasses. The basic recipe is 1.75 cups flour, 1 tablespoon baking powder, and 2 cups liquid ingredients. The last time I made this recipe, I added shredded coconut and used half cornmeal and half whole wheat flour. For the liquid part, I used soy yogurt and butternut squash.
