Snowed in and getting inventive

We've been snowed in up here in Portland for over a week now. I stocked

up before the storm, but I didn't realize how long it was going to last

or how much fresh snow was going to fall each day. So, 14 inches of snow

in the driveway means that Toyota isn't going anywhere.

 

So, I noticed I had 3 packages of tofu left. One was pushed to the back

of the fridge and had an expiration date in 2007. Ouch. Out it went. But

the other two were more recently expired, so I decided to take a chance.

 

I got out my How It All Vegan and began to adapt. I made Sinful

Chocolate Pudding and Tofu Whipped Cream. Both the remaining tofus,

though, were firm, and the recipes called for soft. So I made the

pudding with the firmest and used maple syrup for the sweetener,

figuring the liquid would help mitigate the firmness. It turned out just

grand. I used the silken firm for the whipped cream, and the texture was

just fine. I used agave nectar, though, instead of sugar to sweeten it,

again to give more moisture to the finished product.

 

They say we'll be back to our wonderful, blessed rain on Christmas, so

we only have to last out another couple of days. I'll be back to buying

stuff the recipes call for and all that. But you know, ad libbing works,

too. So if you've got a tub of tofu sitting around, you might want to

try it in a recipe even if it's the " wrong " kind.

I hear you Trish! We've been snowed in here as well and I've been

working from home as the commute to Seattle is a lot left to be

desired. They say snow again tonight so we'll see. Hope you have a

great holiday there!

But, fraggle, it IS spring here.

 

I've been playing around with naming the 6-7 months of the

California spring.

 

We usually have a cold snap this time of year, but soon we'll be

back to normal springlike weather. We have spring the way Eskimos have

snow.

starts with the first rain,

usually November or so. Then, to the envy of those folks back

east, it goes

all the way into May/June. Then comes fall of course, around early or

mid

June. That lasts for a few weeks. Then the final season,

Snow in Portland! It was cold the last winter I lived there (that was

the winter the oil heater in the basement got flooded and we woke up

to a roomful of blue smoke, followed by several days of no heat), but

not cold enough to snow.

 

Inventive cooking with what's on hand is the only kind of cooking I

do! Isn't it fun? Sometimes I buy special ingredients, but then I

forget I have them and, when I finally do use them, invariably it's

for some new invented thing.

 

When I have tofu on hand, one of the things I like to make is a

sauce/dip for potatoes or other vegetables. I usually add lots of

garlic, some lemon juice, and some dill weed, and blend it until it's

creamy.

That sounds lucious. I'll try it the next time I can get some tofu into

the house.

 

It's snowing again -- how's it going for you up in Seattle, Debra? --

and it doesn't look as if it's going to let up until after Christmas.

Man! I'll be glad to welcome back our duckfoot weather. I've lived in

the northwest since 1986, and I love rain. I'm going to do a rain dance

to welcome it back!
