Guest guest Posted January 6, 2009 Report Share Posted January 6, 2009 went downto the kitchen and dug out my copy of "vegetarian sushi" now just need to narrow down which ones to post. here's one to start Shitake Sushi (nigiri) 1 tablespoon soy sauce 1 tablespoon mirin (rice wine ...if you can't find it for whatever reason, i;d try a white wine with agave or organic sugar added) 10 fresh shitake mushrooms 1 cup sushi rice 1/2 nori strip (flat seaweed), cut into strips 1/2 inch by 3 inches finger bowl or similar, with water and splash of rice vinegar combine soysauce and mirin. brush on shitake grill mushrooms 2-3 minutes, or until tender. dip fingers into water and rice vinegar, shake off excess. pick up tablespoon of rice and gently squeeze and shape it into a rectangle with rounded edges. pick up a mushroom with other hand and cup it in your hand press the rice rectangle lightly onto the mushroom, being careful tha the rice doesn't warp out of shape, nor that it gets pushes out of the edge. turn it over so mushroom is on top, conitune gentle pressue. turn rice/mushroom 180 degrees, and continue pressure. it should look like a little rice ball/house with a mushroom roof. place nori strip on top of mushroom and tuck underneath to keep mushroom in place it doesn't say this in the recipe, but i'd moisten your fingers slightly when placing the nori strip, as this will meld it together underneath an hold it in place cheers fraggle nina92116 Jan 6, 2009 11:52 AM Re: New Member/cynthia/sushi  Yippee!!!
