No access to good health food store so ingredients need to be at reg grocers. have vegan cookbook. over half the recipes use ingredients i can't find or use hot spices. I will sort out some more in the week. Jo Red Lentil Hotpot 2oz Red Lentils 1 Onion, chopped 1 Carrot, chopped 1 Celery stick, chopped 1 Potato, cubed ½ to ¾ pint Stock Chilli Powder, tiny pinch (can leave out) Black Pepper Parsley 2 Tomatoes, chopped or 1 Red Pepper, chopped Check lentils for stones, and rinse clean. Put in saucepan with chopped vegetables. Add hot stock, chilli and black pepper. Stir, and bring to boil. Simmer for 20 minutes. You can leave out hot spices if you don't like them. What do you like to eat? In the winter, I love lots of baked/roasted vegetables -- and nothing is easier. Winter Squash Wash the squash. Put on baking sheet or in baking pan. Bake at 350F for 30-50 minutes or until done (smaller ones are done sooner, larger ones may need even longer). Cut in half, scoop out seeds and pulp. (Optional: wash seeds and bake at 250 for 10-20 minutes. Don't let them burn!) Eat. Most squashes have edible peels. Potatoes or Sweet Potatoes Wash. Cut eyes and blemishes out of potatoes. Guest guest Posted February 24, 2009 Report Share Posted February 24, 2009 One of my favourite quick and easy meals is to chop up vegetables (broccoli, courgette, green beans, mushrooms, onions, potato, add peas and stirfy. YOu can add tofu or beans or nuts for protein, and serve with a little rice, or potato, or bread.
