Guest guest
Hello, I found it difficult when I first went vegan, too. If you like Mexican food, here's a simple chilli recipe: 1 onion, chopped 1 clove garlic, crushed 1 pepper, chopped handful mushrooms, halved or quartered, depending on size 1 tin kidney beans, drained and rinsed 1 tin chopped tomatoes chilli powder to taste Fry the onion, garlic, pepper and mushrooms in a little oil to soften, then add the chilli powder and cook for a few more minutes. Finally add the beans and tomatoes and simmer for about 20 minutes. You can serve it with rice, tacos or on a baked potato with salad and guacamole. Another thing I cook a lot is pasta. I cook it in the base of a steamer and steam some vegetables on top (e.g. carrots and green beans). When it's cooked, I just toss the drained pasta in a little vegan pesto (Sacla do a lovely aubergine pesto here in the UK, or you could easily make your own) and mix in the veggies. Sometimes, I sprinkle over some toasted pine nuts, too. Happy cooking! Kathleen , " Monroe County Freecycle Moderator " <akasunnypk wrote: > > use cell 4 e.mail.
