digest. I like variety of tastes. Mexican. American. Italian. Chinese. Etc. All

fresh made real deal not fast food. frustration with vegan crap they sell

locally It's all pre.made frozen. Not fresh stuff we need to make recipe

Hello, I found it difficult when I first went vegan, too. If you

like Mexican food, here's a simple chilli recipe:

 

1 onion, chopped

1 clove garlic, crushed

1 pepper, chopped

handful mushrooms, halved or quartered, depending on size

1 tin kidney beans, drained and rinsed

1 tin chopped tomatoes

chilli powder to taste

 

Fry the onion, garlic, pepper and mushrooms in a little oil to

soften, then add the chilli powder and cook for a few more minutes.

Finally add the beans and tomatoes and simmer for about 20 minutes.

 

You can serve it with rice, tacos or on a baked potato with salad and

guacamole.

 

Another thing I cook a lot is pasta. I cook it in the base of a

steamer and steam some vegetables on top (e.g. carrots and green

beans). When it's cooked, I just toss the drained pasta in a little

vegan pesto (Sacla do a lovely aubergine pesto here in the UK, or you

could easily make your own) and mix in the veggies. Sometimes, I

sprinkle over some toasted pine nuts, too.
