looking for a birthday cake recipe please!

HI, I am looking to make a birthday cake for my mom this weekend and

was interested in any decadent cake recipes anyone may have.(She loves

chocolate btw)I just want to show off how great vegan food is, so any

suggestions are welcome!Thanks!

Happy birthday to your mom :-)

 

The chocolate cake recipe I like is from Ronny, who publishes tiny

booklets of vegan recipes here.

 

The cake recipe is lovely, but I usually substitute a normal (what

used to be called) buttercream filling. This I make with icing sugar

and margarine beaten together.

 

Cake

 

10 oz Plain Flour

3 heaped teaspoons Baking Powder

2 oz Cocoa Powder

8 oz Sugar

2 fluid oz Soya (or rice) milk

1 Banana, mashed

8 fluid oz Water (I have found that 6 oz is adequate)

 

Pre-heat over to gas mark 5 (Elec = 190)

Weigh and sieve the first three ingredients together into a bowl.

Add sugar and stir in.

Add the mashed banana and soya milk and thoroughly mix.

Add about half of water and stir – you may not need all the water.

Pour mixture into two greased 8 inch round tins and bake for 40 minutes.

Leave to cool in the tins.

 

Fudge Icing

 

2 oz Vegan Margarine

1 tablespoon Water

7 oz Icing Sugar

2 oz Cocoa Powder

1 teaspoon Vanilla Essence

 

Melt margarine over a very gentle heat.

Add other ingredients and mix thoroughly.

Leave to cool.

Beat or mix.

Use to sandwich two halves of cake together, and cover the top.

Strangely enough, I have that booklet! Someone gave it to me a

couple weeks ago.

 

gas mark 5 is 375F, which seems high to me.

Thanks. It is a tasty cake. I think the oven setting would be 375.

 

Also, with the buttercream I mentioned, I would add cocoa powder to

it for a chocolate cake - although it would certainly be fine to use

it without.

 

Let me know how it turns out.

We found ours at the Vegan Fair in London. I have used about three

of the recipes, all of which are excellent.

 

The cake cooks well on gas mark 5 with us, but I know that ovens do

vary one from another.
