Lemony Nut and Seed Loaf

This recipe is so delicious. Great with a veggie gravy.

 

2 cups cooked, brown rice

1/4 cup each, finely ground: almonds, pine nuts, walnuts, sesame

seeds and sunflower seeds

1 cup whole grain bread crumbs

Juice of 1/2 a fresh lemon

1 1/2 cups finely chopped onion

Equivalent of 3 eggs whipped (see Substitutions section of this

website)

1 tsp sea salt

3 tbsp nutritional yeast

1/2 tsp each ground sage, thyme and rosemary

few dashes of powdered sea kelp

 

Combine all ingredients. Pack into an oiled loaf pan. Brush top with

oil. Cover and bake at 350 F for 30-40 minutes.

 

Serves 4.

I posted this before adding that I personally wouldn't add the salt

in the recipe.
