eggplant - i need to hide it somehow

Heres the story - I bought two nice eggplants but the husband turned his nose up

at them when he saw. Well I still need to cook them, but I'll need recipes that

will hide them (without destroying them please)in the overall outcome meal.

What suggestions does anyone have?

My husband use to turn his nose up to eggplant too, until I breaded them and

baked them, and put spaghetti sauce over them. Baking them means far fewer

calories than frying.

He also doesn't seem to notice them in an Indian curry sauce either! :)

Try those!

I have a cook book called deceptively delicious (its non vegan cook book but

obviously replace milk, cheese, eggs with vegan alternatives) but this book

has tons of recipes that " hide " veggies and the hungry victims are non the wiser

but it works on husbands too ;)
