Looking at some responses, it seems that some folks are reading your meaning as pre-packaged "just add milk" pudding mixes. When I read it originally I assumed you just meant pudding recipes, which I think is where Jo was also coming from... Of course I might be completely wrong! Guest guest Posted April 16, 2009 Report Share Posted April 16, 2009 I haven't used mixes, but I've made vegan tapioca (with soy/rice milks), Danish fruit pudding (with cornstarch and fruit juice), and a quick chocolate pudding (with silken tofu). She prefers vegan, but does not really follow either a vegan or vegetarian diet. She’s tried to use a sugar-free pudding mix with soy milk, but it didn’t “pudd”. She’d probably be willing to make it from scratch, but it would have to be super easy and fast. She’s nearly bed bound and only up for 20-30 minutes at a time 4 or 5 times a day. I am intrigued though that it doesn't work, as I can see no reason at all for this. I would think it best to avoid any puddings for a little while. I think a low glycemic load diet would be best for her - i.e. balancing carbohydrates with protein. I would recommend the Patrick Holford books on this, but any similar ones would probably be just as good. Here is a recipe for vegan chocolate pudding and also an ad for a vegan pudding mix that uses silken tofu. Like I said, I've never tried it but it might be good. HERE IT IS 1 avocado 1/2 mango put it in a food processor until it reaches pudding consistency you can substitude mango for any fruit and if you like it more cramy you can add more avocado. You can also make great ice cream if you have a vitamix blender or any powerful blender (like blendTech). to 1 avocado add any frozen fruit and viola.
