One reason I love veggie burgers, veggie brats and the like is

convenience. As a teacher, my job is demanding of my time and my energy.

When I get home, I don't want to spend much time cooking. A veggie

burger goes together quickly. That's very important for me.

 

I also have many other things I do when I'm not working, everything from

a Zen meditation circle to knitting with a group of friends. There isn't

time for everything, so something gives way. Meat analogs allow me to

live a vegan life without having to spend most of my time in the kitchen.

 

I do like kitchen time. I just don't like to be obligated to it every

single day. There are times when I feel like cooking up a mess of whole

grains or beans and freezing them for later. But on weekends, I often

just want some down time. The astonishing variety of vegan convenience

foods makes life a whole lot simpler for busy folks.

I do agree about the time aspect. We use veggie sausages, chickeny bits etc. when we are busy, or sometimes because we just fancy them. There are quite a few quick vegan meals to make though, like pesto pasta, and several other pasta dishes made with vegan cream, walnuts, or beans etc.
