Hi Judy

A late reply - I've been away for a long weekend.

We freeze lemon peel for future use - it works well.

Thanks Jo. Do you put the peel in water or just freeze it " dry " ?

We just cut the lemons in half - squeeze the juice, and freeze the juice in ice cube trays - and then put the lemon peels in a plastic bag in the freezer. Then when we want grated zest we can just grate it off the frozen peel.
