A while back, I learned about an egg substitute that always works! Grind 2

Tablespoons of flax seed, then add 1/4 cup of water to that and allow it to

stand 5-10 minutes. Add your other ingredients and mix well.

I use this for pancakes, muffins, coffee cakes..it works very well, and the flax

seed has omegas. You may have to adjust your recipe as far as texture, but you

will like the results. my pancakes are heavenly.
