I am still trying to get into a regular routine of vegan food. So far i have been eating ALOT of fruit, some grains, and some chocolate. I would like to see what other people eat on a daily basis so that i can build a normal breakfast-lunch-dinner menu for myself. I think ive got the snack part figured out . I would love to see like a page of someones " food log " , or food diary if anyone keeps one. Or if you could just tell me everything you ate yesterday, that would work! Thank you so much! Guest guest Posted August 3, 2009 Report Share Posted August 3, 2009 Hi I tend to have a breakfast (usually something like porridge, muesli, cereal, or fruit), then a lunch which is usually bread-based with protein (so a nut butter & cucumber sandwich, falafels, etc.), and then a dinner in the evening which is very variable.. last night had " chicken brocolli " (with fake chicken, of course!), recently had chilli, lasagne, korma, lebanese mezzes... Guest guest Posted August 3, 2009 Report Share Posted August 3, 2009 Generally for breakfast I have a grapefruit followed by 2 weetabix with fruit (today I had strawberry and kiwi) and soya milk. Sometimes i will have porridge again with soy milk and with some fruit, I've also been known to have porridge with raspberries, soya milk and soya cream for a treat. Other breakfasts I have sometimes at the weekend are:- vegan pancakes with maple syrup and fruit, scrambled tofu and cottage fries, french toast made with pancake batter instead of eggs. For lunch I usually save myself a portion of the night before's dinner and have it with some fruit. This may not work well if you have to go to work every day and have nowhere to heat it up, but pasta from the night before makes a good pasta lunch salad. Hummus with pitta bread or bagels is another lunch idea. Stir fry with a handful of cashew nuts or some kind of soy substitute sandwich are other ideas. My husband takes a round of salad sandwiches and a round of peanut butter sandwiches to work everyday. Sometimes he will also take fruit or a vegan choc chip cookie or vegan cake. Myself, I would probably take a snack of pumpkin seeds if I was taking a lunch to work. Dinners we are having this week are: Tonight we are having a chilli made with onions, peppers, red kidney beans, green lentils served with brown rice, pitta bread and fresh avocado and coriander. Tomorrow is pasta with a homemade tomato sauce with flageolet beans and garlic ciabatta. Wednesday is sweet potato, butternut squash and chick pea curry with brown basmati rice and poppodums. Thursday is using the rest of the sweet potatoes and butternut squash in a soup with red lentils with salad and homemade bread. Quite often we would have a fruit crumble or something similar on a soup day. Friday is spicy chick peas with basmati rice and onion salad. At the weekends we usually have something tofu based like a tofu tikka masala or stir fried tofu with ginger, green chilli and sugar snap peas or a vegetable stir fry with cashew nuts. You can see how food obsessed I am! I also like to make vegan cakes and cookies as a treat although not all week long! Hope this helps. I have a sandwich with salad at lunchtime in the week, and homemade soup and bread at the weekend, some fruit in the afternoon and a dinner such as lentil hotpot with potatoes and broccoli, or spaghetti bolognese, almond paella, or Goan green curry. You need 2 onions chopped, a red pepper, a green pepper both chopped, a tin of chick peas, 2 tablespoons of tomato puree, half teaspoon chilli powder, 1 teaspoon of ground coriander, one teaspoon of ground cumin, one teaspoon of ground ginger, three quarters of a british pint of stock (about 16 fluid oz) black pepper, squeeze of lemon juice (optional), chopped fresh coriander to garnish (optional). Gently fry the onions with the spices for 5-7 mins then add the chopped peppers and fry for a couple more minutes. Add the chick peas and stir round then add the stock and tomato puree. You can add less stock if you want the chick peas a thicker consistency - we just love the oniony stock in my family but the real recipe is 10 fluid oz (half a british pint). This then needs to be simmered for about 10 mins. Then add black pepper and fresh lemon juice to taste. Serve on steamed basmati rice with garnish of fresh chopped coriander. Guest guest Posted August 4, 2009 Report Share Posted August 4, 2009 Breakfast is almost always oatmeal and fruit. Uncooked. Rolled oats, water or soymilk or ricemilk, and fresh fruit. Lately the fruit has been blackberries from my garden. In the winter, sometimes I heat the liquid. If I eat it immediately, the oats have some texture. If I let it sit for a while, the oats get very soft. Sometimes I add some ground flax, or sliced almonds, or sunflower seeds. If I have no time to eat breakfast, sometimes I have some soy yogurt. I almost never eat a " meal " at lunchtime. If I'm sitting at the computer, where I have a selection of nuts, dried fruit, rice crackers, cherry tomatoes from my garden, and dark chocolate, I graze. If I'm away from home, I bring some fruit, or even a peanut butter sandwich. Dinner is usually very late, especially if I've been working in the garden until it's too dark to see the plants, so it's whatever takes little or no prep time. In the garden, I eat an occasional cucumber or kale leaf or garlic-chive flower or half-runner bean or strawberry. So yesterday when I got home I had a couple ears of corn (which I like best uncooked), 3 kinds of baked squash I'd picked an hour before, and some toasted whole-grain bread with tomatoes and cucumbers from my garden, and some avocado. Oh, and a handful of berries. When I make something more elaborate than roasted vegs for dinner, I make enough to last a few days. Also, I often make a few things at a time when I have some time to cook. So I wash and thinly slice a grocery-bagful of perennial kale from my garden, dip it in boiling water for 30 seconds, use the same cooking water to cook romano beans from my garden, and then use the cooking water as a base for lentil soup (with rice, carrots, celery, etc.), which takes 50 minutes or so to cook. The cooked kale can then be eaten as is or with peanut sauce, added to spaghetti, etc. (It has a more substantial texture than other kales.) The lentil soup can last for 3-4 days. In cooler months, I'm more likely to cook some grains or bake some muffins. Other quick favorites: Roasted cauliflower -- break into chunks, put on baking sheet, bake at 350 degrees until done (20-40 min.? usually it " smells " done, is a little soft but still has some texture). I don't use oil or salt. Same thing for potatoes, sweet potatoes, parsnips, carrots, summer or winter squash, etc. Hummus -- open can of chickpeas/garbanzo beans, separate beans from liquid, chop up a few cloves of garlic, juice a lemon, combine all and blend. Add some liquid as needed to get desired consistency. Add your choice of red pepper flakes, spices, mint, etc. Use as bread/cracker spread or vegetable dip. I rinse and drain 1 can of chickpeas, slice half of a red bell pepper in strips, slice a half of an onion, mince as many cloves of garlic as you like, I use 3, then I make a lemon and olive oil vinaigrette , add salt and pepper and chopped parsley. That's it. You can add less stock if you want the chick peas a thicker consistency - we just love the oniony stock in my family but the real recipe is 10 fluid oz (half a british pint). This then needs to be simmered for about 10 mins. Then add black pepper and fresh lemon juice to taste.
